Las verduras son una parte importante de una dieta bien balanceada. Muchas personas se preguntan si las verduras congeladas o enlatadas son tan nutritivas como las verduras frescas. La respuesta a esta pregunta depende del tiempo entre la cosecha de las verduras y los procesos de congelamiento y enlatado. Generalmente, las verduras congeladas o enlatadas se preparan inmediatamente después de la cosecha cuando el contenido de nutrientes está en su punto máximo.

La forma en que se preparan las verduras en el hogar también puede afectar el contenido de nutrientes. Las verduras de cualquier tipo (frescas, congeladas o enlatadas) que se hierven en grandes cantidades de agua durante largos períodos de tiempo pierden mucho del valor nutricional comparadas con las que se cocinan levemente al vapor.

Las verduras frescas o recién recolectadas en las granjas son más nutritivas que sus contrapartes congeladas o enlatadas; pero estas últimas son una alternativa nutricional aceptable. Simplemente tenga cuidado con la cantidad de sal agregada a las verduras enlatadas; trate de comprar las que no contienen sal agregada. Asimismo, no cocine las verduras demasiado.
