La principal consecuencia del manejo inadecuado de los alimentos es la infección (enfermedad por intoxicación con alimentos). Los síntomas de la enfermedad causada por intoxicación con alimentos varían, pero generalmente abarcan problemas gastrointestinales. Esta enfermedad  puede ser grave y potencialmente mortal, especialmente en niños pequeños, ancianos, mujeres embarazadas y personas con un sistema inmune debilitado.
